After switching my family to a compassionate vegan diet, we all feel more peaceful. I have a cool tip on how to make a quick snack with sweet potatoes. Preheat your oven to about 220 °C and slice the sweet potatoes into rounds roughly 2.5 cm (1 inch) thick. In a small bowl, mix olive oil with garlic and thyme, then season with salt and pepper. Pour the oil mixture over the sweet potato slices and toss them well so every piece is evenly coated. Spread the slices on a baking sheet, leaving some space between each one. Bake for 25 to 30 minutes until they’re fork-tender. Switch the oven to medium, gently smash each slice with a fork, potato masher, or the bottom of a glass, and bake for another 3 to 5 minutes until golden and crispy. Serve warm, with a sprinkle of vegan cheese if you like.
