Where do us vegans get our protein? Nuts and legumes of course! So today, I have a peanut preparation tip for your vegan protein needs. Washing peanuts before roasting offers several benefits. It cleans the peanuts, reduces any musty smell, and helps the kernels cook evenly and stay crispy longer. This method is widely used, including for traditional basil roasted peanuts in certain countries. Washing adds a thin layer of moisture on the surface, which slows the initial heat and allows it to penetrate gradually, preventing the outside from burning while the inside cooks through. In commercial roasting, a “moist roasting” technique is sometimes used, soaking peanuts in a salt solution so the heat and salt reach deep into the kernels. For best results at home, drain the washed peanuts thoroughly by fanning or sun-drying, then roast over medium heat while stirring evenly. Once cooled, store them in an airtight container for lasting crispness.
