We are constantly reminded of the importance of incorporating abundant fruits and vegetables into our diet for getting enough vitamin C. Neither animal-people nor plants can survive without it. In addition to maintaining a healthy immune system, vitamin C may also help lower the risk of cataracts and slow age-related macular degeneration. Moreover, vitamin C helps the body make a type of protein called collagen, which is one of the basic components of the skin, cartilage, tendons, ligaments and blood vessels. Furthermore, vitamin C can be beneficial for metabolic disorders, such as diabetes. Not only is vitamin C helpful for controlling blood sugar levels, but it also has been found to have a positive impact on cardiovascular health.

In order to keep vitamin C intact to work at its best inside the body, it is always best to consume your vegetables raw and fresh or lightly cooked because vitamin C is sensitive to heat and light. A healthy and balanced vegan diet readily provides all essential nutrients for our body to thrive. The vegan diet is suitable for people of all ages and stages of life, including pregnancy, infancy, childhood, adolescence and older adulthood, as well as for athletes.
