Founded and run in Germany by MCO GmbH as a local health fair for many years, VeggieWorld Expo developed into a full-fledged plant-based lifestyle trade expo with help from ProVeg International – a non-governmental organization committed to food system change. The first VeggieWorld Expo opened in Wiesbaden, Germany in 2011. The launch was met with great support and interest from both the public and industry. As a result, VeggieWorld grew rapidly from hosting in three cities in 2015, to 19 cities across 10 countries in 2020. Today we will take a trip to the city of Yeoju, which is in the Korean province of yeonggi-do, with two sisters Yu Na and Na Ri. There are a wide variety of beautiful Spring flowers in full bloom now. The sisters have gone to pick some edible flowers for their pancakes. “Today, I’m going to make a five-colored flower (vegan) pancake and a five-colored glutinous rice ball (vegan) in tea punch. The main ingredient for flower pancakes is glutinous rice flour, which I have weighed and divided into 150 grams each. To make the five colors, I’ll put them into five bowls like this. This is turmeric powder. It acts as an antioxidant, boosts immunity, and has anti-inflammatory properties. This is goji berry powder. It is a commonly known food that boosts immunity and acts as an antioxidant. This is beet powder. It helps improve blood circulation and increase immunity. This is mugwort powder. It warms our body and helps improve blood circulation. I’ll make some yellow and some red flower pancakes. Could you add salt first, please? (Yes.) Next, I’ll add turmeric powder and beet powder respectively for color. I think you can add two teaspoons of each. I’ll add 100 milliliters of hot water. Please stir it. Shall we knead it by hand? (Yeah.) Now divide the dough into seven equal portions. One of these will be set aside for the rice balls. Set one aside. Press the ball flat as before to make a pretty flat pancake. Apply rice syrup in the middle. (I’ll put flowers on it.)” The vegan pancakes with five different colors look so pretty and colorful! “We prepared the small doughs earlier. I’ll make five-colored sticky rice balls with it. Let’s make eight balls out of this dough. Usually, you just need to boil it for about two to three minutes. Now I’ll scoop them out and cool them in cold water. Decorate them by arranging the strawberries nicely on the edges.” Finally, we need Omija tea to complete the five-colored glutinous rice ball Omija Tea Punch. Omija means “five flavors,” which are sweetness, sourness, bitterness, saltiness, and pungency. “Soaking Omija in cold water for more than five hours gives it this pretty color. Pour enough to cover the rice balls.” All these snacks are made with healthy ingredients that help boost our immunity, are filled with the fragrant scent of Spring flowers, and are beautiful and pleasing to the eyes.

In early 2020, Ms. Velez-Mitchell, along with a dedicated, hardworking team of more than 70 people, launched the first series of New Day New Chef. In many ways, the show is very unique, as Jane explains. Each show features internationally renowned celebrity chefs such as Katie Sarife, the star of “Annabelle Comes Home,” “Downtown Abbey’s” Lesley Nicol, American Idol announcer, Mark Thompson, NBA legend, John Salley, plus many more.While Jane and her team were preparing season two, their plans had to be quickly revised, because Covid-19 suddenly struck, creating a global pandemic, and forcing many countries, including the USA, into lockdown. Even Jane’s studio was closed to groups of people. However, Jane Velez-Mitchell and her dedicated team proved to be unstoppable. They began to film the cooking shows with unmanned, robotic cameras. That’s the real danger, I want to tell you, and the real challenge that African agriculture will have to make up for. Brendon Bale is very thrilled to share with us how his vegan journey began, and what led him to found the Green Gazelles Rugby Club in 2018. “My name's Brendon Bale. I recently established the first vegan rugby club. We’re called the Green Gazelles Rugby Club, and it’s made up of players from all over the world who follow a plant-based lifestyle. Ripe jackfruit is packed with large, fleshy edible bulbs embedded in a tough core. It has a tropical flavor similar to a mix of banana, mango and pineapple. People were surprised after tasting these dishes that jackfruit could be used to create such delicious meals. Today the first recipe we will share with you is a vegan curry dish made with ripe Jackfruit. Bring a pot of water to boil. Add in the jackfruit seeds and continue to boil for another 15 minutes. Then scoop out the boiled jackfruit seeds. When the seeds have cooled, peel off the soft white membrane that form the outer coat of the seeds. Next, heat up a saucepan and add olive oil. Then add sliced button mushrooms and stir-fry. Add diced potatoes, diced carrots and two liters of water. Cover the pot with the lid and continue to cook at medium-low heat. till all the ingredients have softened. Add mixed spice powder, red chili powder, lemongrass powder, and the vegan curry cubes. Add the boiled and peeled jackfruit seeds. When the vegan curry cubes have fully melted, add in the sliced ripe jackfruit. After the curry starts boiling, gradually add in coconut milk and mix well. Add the cashew milk and mix well. Continue cooking till the curry gravy thickens. We can enjoy this delicious Vegan Jackfruit Curry with a serving of boiled Jasmine or Basmati Rice. Our next dish is Spicy Jackfruit Vegan Sauce, a great accompaniment with vegan foods such as sandwiches, tacos, burgers, burritos, pasta, baguette, rice, noodles, and the list goes on… Turn on the fire to warm up the pan. When the olive oil is heated, add the sliced king trumpet mushrooms, and stir-fry. Stir-fry till the trumpet mushrooms turn soft and golden brown. It takes about 15 minutes. Add in the sliced ripe jackfruit, mix well, and continue stir-frying for about three minutes. Lower the fire to medium-low heat, cover the pan with the lid and simmer for two minutes. Add diced tomatoes, mix well, and turn up the fire to high heat till the mixture comes to a boil. Then reduce the fire to medium-low heat. Next, add mixed Mexican spices, smoked paprika, dried chili flakes, shiitake mushroom powder, and salt. Mix well, cover the pan, and continue simmering for another three minutes. Cook till the flavors have been fully absorbed by the ingredients. Garnish with a sprinkle of dried chili flakes and finely chopped coriander on top of the dish.

An Afro-vegan gastronomic designer and holistic consultant, Ayaba is passionate about Caribbean, Indian, and traditional In August 2018, Ayaba Galbas published her first book 'On mange Afrique! VEGAN,' which translates to 'We Eat Africa! VEGAN.' "It is an e-book, available worldwide, called 'On mange Afrique! VEGAN.' In this book I worked on the preparation of 24 plant-based and gluten-free recipes. We have a lot of gluten-free cereal choices on the African continent. It’s a mixture of traditional African recipes." Beautiful photographs illustrate succulent recipes that are simple and easy to make, as readers discover cuisines from the African culture and way of life, as well as from elsewhere. Ayaba Galbas tells us her most important reason for becoming vegan. "Simply because I consider that we are what we eat, or at least we become what we eat. In the Ital concept, which is the Rastafarian diet, we consider that if we eat corpses, flesh, anything that is meat, we will become, we tend to become corpses ourselves, or at least dead flesh. The idea was to be able to regain vitality, and really be in this spectrum of an inner peace, of a path sincerely inclined towards peace. I think what we eat also impacts our state of mind, our morality, our mentality, our energy.” How can veganism be promoted in Africa? “It is passed on through education, as always. Having a pleasant fibrous texture while giving a tender and “melt in your mouth” sensation, the jackfruit has been rediscovered as a perfect vegan alternative to meat in the West. In today’s show, we will introduce two authentic, delicious, and healthy vegan young jackfruit recipes, which are beneficial in purifying our body and mind.The first dish we will make is Vegan Jackfruit Steak. Heat up a frying pan and add two tablespoons of olive oil. Stir-fry the sliced jackfruit flesh. When fragrant, stir in the fibrous strands and continue to stir-fry until the strands turn soft. Add soy sauce and stir-fry for a while. Cover the pan with the lid and simmer over low heat for five minutes. It is now ready. Transfer the stir-fried ingredients into a food processor and blend by holding the pulse mode for about a few seconds, and repeat twice to generate a fibrous mash. Then add the pre-cooked chickpeas, oatmeal flour into the food processor, close the lid, and apply pulses for a few seconds each until the mixture is lumpy. Now we’ll start making the vegan steaks. Firstly, we shape the cooked mixture into small balls, then mold them into patties. Add two tablespoons of olive oil into the frying pan to heat up on medium heat. Fry the vegan steak patties until they turn golden-brown on both sides. Now, we will present the Japanese Vegan Jackfruit Croquette recipe. Place the halved washed potatoes flat side down in a pot and add water slightly below the potatoes top. Cover the pot and turn on the stove to bring to a boil. After the potatoes have boiled for around 10 minutes, scoop them out. Heat up coconut oil in a shallow pan. Add finely diced jackfruit and sauté until fragrant. Then add finely chopped fresh rosemary and sauté until the aroma is released. Remove the skin of the boiled potatoes. Mash the boiled potatoes. Add the mashed potatoes to the stir-fried jackfruit and vegetables and mix them well. Tightly squeeze each portion of the mixture into an oval-shaped ball. Stir water into the wheat flour, then mix in turmeric. Coat each oval ball in the batter until evenly coated. Then cover the coated balls with breadcrumbs. Add sufficient sunflower oil in a small fryer to slightly cover more than half of the thickness of the croquettes. Heat the oil to between 150ºC to 180ºC. Don’t flip them over until after two to three minutes when the color of the croquettes turns golden brown. Then flip them over, fry for another two minutes, and the croquettes are done.

The aromatic jackfruit is the world’s largest tree-borne fruit and has been a common food source for centuries in tropical South and Southeast Asia. People from these regions revere the jackfruit as it has saved millions of lives during years of food scarcity. It is honored as the national fruit in both Bangladesh and Sri Lanka. Due to its versatility, jackfruit is considered a miracle crop that can improve worldwide food security amidst the effects of climate change. During the initial weeks of the COVID-19 pandemic, many people in the Sri Lankan rural villages lost their source of income, waiting for weeks or even months before any form of government support reached them. Fortunately, the villagers could rely on the jackfruit crops as their staple food, thereby preventing another food shortage. The jackfruit is an evergreen tropical tree fruit native to South Asia and Southeast Asia. Archaeological evidence reveals that its cultivation in India started as early as 1300 BC. This fruit is a member of the mulberry family, related to fig and breadfruit, and prefers tropical or near-tropical lowlands with rich, deep, and porous soil to flourish. The tree is easy to grow, highly productive, resilient to pests and disease, and can endure extreme weather conditions. Once established, it requires minimal attention. Jackfruit can weigh on average between 10 and 15 kilograms. In some cases, they can even weigh up to 45 kilograms! In its native climate condition, the jackfruit tree is very productive and its fruits can be harvested all year round, and the peak season being summer. A healthy tree can produce up to 200 fruits a year, equivalent to three metric tons. The jackfruit tree is blessed with longevity, having an average life span of 60 to 70 years. This amazing fruit is a nutritional powerhouse. It is rich in dietary fiber, which helps maintain digestive health and weight control; it is also free from fats and bad cholesterol- good for cardiovascular health. Moreover, it has plenty of essential vitamins, minerals and antioxidants that support the immune system and helps to prevent cancer and inflammation.

Uplifting Vegan Festivals from Around the World, Part 3 of 3

Today, we tour vegan festivals across four Asian countries: Korea, Thailand, Singapore and Indonesia. Our first stop is the 7th Vegan Festival in Seoul, Korea. The event’s theme was “World Vegan, World Peace” and our Supreme Master Ching Hai International Association members in Korea also participated with prominent banners that promoted Supreme Master Television. Master’s book “From Crisis to Peace” together with an Intergovernmental Panel on Climate Change (IPCC) flyer were distributed. Our second destination is a national 10-day veg fest called “Tesagan Gin Je” also known as “Nine Emperor Gods” festival celebrated in various locations across Thailand. In 2019, it was observed from September 28 until October 7. The event is held annually during the ninth month of the lunar calendar and is intended to encourage people to adopt a 10-day vegetarian or vegan diet for the purposes of spiritual cleansing and merit-gaining. We next cover a vegan event in Singapore, a cosmopolitan country named as the cleanest country in the world and the second most vegan-friendly Asian city by PETA Asia. We head down to the festival venue to soak in the positive energized ambience, to savor the yummy, colourful vegan goodies and meet Ms Pooja Bakhashi, the organizer, and Dr Priyadarshani Kamat, a clinically trained homeopath and holistic healer. They tell us about the purpose of organizing the Singapore Vegan Festival as well as how to eat healthy as a vegan and save the world, respectively. The final destination on our vegan festival tour is the magnificent island of Bali, Indonesia, also known as “The Land of the Gods.” The festival is called the “Bali Vegan Festival, Vegan Lifestyle Good for All,” and was held in quite a unique venue, a Buddhist temple in the area of Denpasar on the 26th and 27th of October 2019.

Today, the vibrant and joyful couple, Erin and Dusty, will show us that cooking homemade vegan dog food can be easy and fun. “We’ve got another nutritious and delicious recipe for you guys today. But it’s not technically for you guys; this one is for your fur babies.” “The bulk of your recipe is going to be these three items. We’ve got two cups of green lentils, two cups of brown rice, and about two medium diced sweet potatoes. Like I said, this is the bulk; this is going to be most of the calories.” “OK. All you’ve got to do is pour these into an instant pot and then fill your instant pot about three-quarters with water. Once you have those in the pot, close it and make sure it’s not vented and set it for 30 minutes.” “This is after about 35 minutes in the instant pot. It looks incredible; it’s creamy, it’s smooth, its juicy.” “The next step is to use an immersion blender to puree your dog food.” “We’re going to add in our two cups of leafy greens, and then Beau’s other favorite, our three carrots. We’re going to add it to our berries. Now I’m going to give that a quick stir. Now we’re going to add in our nutritional yeast, our ground flaxseed, our flax (seed) oil, and last but not least, our supplements. We’ve got our Vegedog with all of our vitamins and minerals, our green powder Green Mush, and our Cranimals. Dinner is almost served. So, we’re going to take our homemade vegan dog food, and we’re going to put it on top as gravy.” “Again, feel free to get creative with it, but do your research to find out what dogs can and cannot consume.”

"I was boxing, kickboxing, MMA (Mixed Martial Arts), all while I was vegan. Being vegan, the first thing is not 'eating animals.' I mean, that's a great feeling. Not having that negative energy is incredible. Also, in terms of getting your energy back, having a resurgence of energy and power. I have that and I have the protein that I need, and I feel incredible. My chronic bronchitis has cleared up. I feel great and I feel this is the best way to go. The only thing I can say is that I wish I would've gone vegan a long time ago. Hopefully everybody is vegan, and, if you're not vegan, try it for a week, try it for two weeks; you're going to feel a lot better." Let’s travel to Tel Aviv, the second most populous city in Israel and the economic and technological heart of the nation to join what was billed as the largest vegan festival in the world. This coastal city is also known as the “Vegan Capital of the World.” According to Omri Paz, founder and CEO of Vegan Friendly, the organizer of this event, over 50,000 people participated together with 1,000 vegan activists and featured over 100 booths. “An event like this can make me very positive. And as you can see around 50,000 people are going to come here to try vegan food, how many of them are vegan, maybe 10,000? So, most of the people here are not even vegan, and they want to take part in this amazing revolution.”

So, that’s what I eat almost every single day.” “The night before, I take a little bowl or a jar, and I put oatmeal, plus I add soy milk. And then I put some chia seeds in it, so it kind of makes it a little thick.” “ It makes it gel.” “I put some flaxseed oil and hemp seeds. And that is my power breakfast every morning.” “Oatmeal is again full of fiber. Basically it regulates your blood sugar, and gives you a lot of fiber.”

Welcome to our show, “The Future Is in Our Hands – The Year 2020 in Review.” What a year 2020 has been! It may forever be remembered as the year of COVID-19. As of December 2020, over 75.7 million cases of COVID-19 have been reported around the world. Pandemics have come and gone in the past, proving that we humans are a highly resilient species. However, the confluence of an insidious pandemic, a locust plague of biblical proportions, and an unusually high number of climate-related natural disasters such as we experienced this year are unlike anything we have seen before. We have been amply forewarned of such events. Expert bodies like the World Health Organization (WHO) and the US Centers for Disease Control and Prevention (CDC) have indicated for years that most emerging infectious diseases are zoonotic, meaning originating from animals, and that our livestock factories and wet markets are ticking time bombs for pandemics. As for climate change, scientists have been sounding the alarm for decades. Unfortunately, repeated pleas by climate scientists in the past decades have largely been ignored. So, what are we to do? In trying times such as these, humanity has often turned to the enlightened Ones for answers. One who walks among us today is Supreme Master Ching Hai. For decades, She has tirelessly and compassionately advocated a panacea for virtually all ills on Earth. It hinges on the fact that practically all our Earthly woes are the result of the human habit of consuming animal products. Fortunately, even before COVID-19, a rising wave of conscious consumption and veganism has been sweeping the globe. We pray that we will not one day look back at the year 2020 with regret that we did not take to heart the hidden message of COVID-19 to forgo animal-based food, but rather, will celebrate 2020, as the year that humanity awoke and pivoted towards a resplendent vegan world and Golden Era.

Ushering in the New Year with Homemade Orange Flavored Vegan Chocolate Truffles

New Year’s Day is one of the most celebrated public holidays in the world. Today we will show you how you can make your own vegan chocolate truffles to share with friends and family as an expression of your love during this festive occasion. Let’s begin by watching how the chocolate truffle mixture with orange zest is made. Fill a quarter of the pot with water. Turn on the fire. While waiting for the water to boil, place the bowl containing the chocolate on the top of the pot. Be careful not to melt the chocolate directly in the pot, as this will cause the chocolate to burn. When the chocolate is completely melted and becomes glossy and shiny, turn off the fire and remove the bowl from the pot. Next, use a zester to grate an orange. Use only the colorful part of the peel, not the white pith. Then add the orange zest to the melted chocolate, and mix them together. Stir until its’ well mixed. Pour in the rest of the ingredients, which are one-third teaspoon of salt, 200 grams of extra virgin olive oil, and 180 grams of vegan whipped cream. Make sure you mix them very well. The chocolate truffle mixture has now cooled and solidified after one or two hours in the fridge. Now we’ll prepare the ingredients for coating. In individual bowls, place the following coatings of various colors respectively: 50 grams of coconut shreds, 50 grams of cocoa powder, 50 grams of chopped hazelnuts, and 50 grams of frozen dried strawberry powder. To make individual truffle balls, you can use a cookie scoop. Place the scooped chocolate truffles in the various bowls of coatings. Keep repeating this step until you finish scooping all the chocolate truffle mixture. We are trying to make all the balls the same size. Next, we will be rolling the scooped chocolate mixture into balls. The mixture can get a little sticky and messy, so it is advisable that you wear a pair of gloves when rolling the balls. The gloves also help prevent the truffle balls from warming up and turning soft because chocolate is very sensitive to temperature change. OK, the chocolate truffles with four flavors of coating are done. In addition to this, we will use two more ingredients for the coating. It’s time to place all the delicious multi-colored vegan chocolate truffles on a plate. This will surely please our guests; they have so many choices.

Today, we highlight the vegan wedding of Nguyễn Minh Quang and Trần Phương Thảo in Âu Lạc, also known as Vietnam, and hear from the guests at the vegan wedding of Wu Zhi-Hui and T. Celestine, whose nuptials we covered last week. Quang and Thảo are aware of the negative impacts of animal consumption including environmental destruction, climate change acceleration and serious health issues. They have candidly and bravely convinced their respective parents to celebrate a plant-based wedding without taking the lives of sentient beings. This was the very first vegan wedding in Hải Phòng city, their hometown, and the couple has a passionate message to those of their generation who are planning their weddings: "We are very satisfied today by successfully hosting a vegan wedding because we proposed to have a nuptial banquet without involving in killing sentient beings. And this is the greatest joy for both of us. Animals and all beings are also cheerful for our happy day, and there was no bloodshed at all. Therefore, young friends, please try to have more vegan weddings like us today, so that we can save more animal friends." Some might hesitate in the beginning, being concerned that their guests may refuse or reluctantly attend a plant-based wedding banquet. However, as we will see from the following attendee reactions, it will all turn out great thanks to delectable, healthy food without the animal-killing energy. Guests of the newlyweds from both vegan weddings now share their thoughts with us: "Great! So good, so healthy." "I am Jonathan from Australia. I work for an NGO (non-governmental organization) in Taiwan and our focus is on protecting animals. So, it’s quite related to today’s wedding. This is my first time participating in a vegan wedding. I think it’s beautiful to have a wedding that represented their values; being [they are] such compassionate people. So being able to enjoy that compassion with everyone today was a great moment. Absolutely, I think more and more people are thinking about the impact their diet has on the environment, on animals and on their health. Having a vegan wedding is definitely a great way of doing that."
