Today, Chef Shon Sang-young will introduce another popular dish, which is well loved by their customers. "I've been vegan for ten years. I became vegan because I didn’t want to live at the expense of any animals. I was so happy when Loving Hut Songchon opened in the nearby area. 'Bean Sprouts Bibimbap' is my favorite here. It’s full of vegetables, so deliciously cooked." Bibimbap is a traditional Korean dish, a rice bowl topped with various vegetables and chili paste. Loving Hut Well-being Songchon makes bibimbap with organic brown rice topped with vegetables and served with a side dish - Korean-style vegan BBQ beef, also known as Soy Bulgogi. Let’s watch the cooking demonstration.

I’m going to present you the (vegan) pineapple cupcakes. It’s going to have two parts; the cupcakes sponge and I’m going to make pineapple mousseline cream. We start with the cupcake. And how will I be sure it’s ready? Just because if I put a toothpick in the middle, it comes out very clean and dry. I’m going to use some fruit juice. In this case-pineapple, but you can use strawberry, mango, passionfruit or whatever. There is another point I would like to mention regarding vegan desserts. I very often hear the comment that vegan desserts and vegan cuisine, in general, are expensive. And I don’t think this is right because my aim in all my desserts is to use common, easy and cheap ingredients. So I hope I did make my point. Vegan cuisine is not more expensive.

In today’s show, we’ll introduce you to the fun part of the event, with contributions from artists, both professional and amateur. Let’s first check out the Costume Contest. The event organizer also arranged programs performed by professional artists who are waiting to treat us. Other than the stage program, there was also a table exhibition which included 40 exhibitors at the 2019 Veggie Pride Parade. About two thirds of them are grassroots organizations. It is very encouraging to find new grassroots organizations sprouting up every year. Indeed, the vegan landscape has changed so much compared to what it was a decade ago, thanks to all the heroes that we saw in the show and many others who have adopted a vegan lifestyle that benefits all.

Animal Rebellion was established in June 2019 by eighteen leading social justice groups in the UK, broadly known as the Rebellion Alliance. Both groups, Animal Rebellion and Extinction Rebellion, plead with the government to declare climate change as an emergency, to act with urgency to slash emissions to “net-zero” by 2025, and to set up a citizens’ assembly with legislative power. "Animal Rebellion’s goal is a world where all animals, all beings are free from exploitation and oppression.… We all need a stable climate to survive. And Animal agriculture is the leading cause. …So, the only way we can address the climate emergency is by first addressing the animal emergency, and the strategy that we’ll be using will be non-violent direct-action civil disobedience. When we do these actions, we really force the public to listen, and to hear this narrative that we are telling."

Based on the consensus of the scientific community at large, animal agriculture is the leading cause of the climate emergency. That is why for the first target during its two-week-long October Rebellion event in October 2019, Animal Rebellion chose UK’s oldest and largest meat market, London’s Smithfield Meat Market. The second place it demonstrated at was the Department for Environment, Food and Rural Affairs (DEFRA). It asked the government to end subsidies for the livestock and fish industries, to encourage farmers to switch to growing crops, and to help them with the transition. “Please, we ask you, consider the world you want to leave behind for your children. We hope you’ll join us in this fight for peace, freedom, and a better, brighter future.”

First, we are going to mix the cooked mung beans, with fresh pressed coconut milk. So, we mix this. Then we start heating it, and we add the organic jaggery to it for sweetness. So, you keep stirring it and bring it to a boil. You just cook it for a few minutes. Then once it starts boiling, just mix it once in a while. When you add jaggery and then boil the coconut milk. And now we are going to add some cardamom powder for flavor. After adding the cardamom, you don't cook for very long. Just a little boil and then you switch it off. Yes, so the sweet is done. We are going to garnish it with some almond slices. And some raisins. And that's it!
