So not only is the meat putrefied when the animal is killed, because it sends a signal to the nervous system that putrefies the meat, and the digestive system can’t digest it. It's killing the body, and it’s lowering your spirituality, and bringing karma upon you.”While busy fulfilling his Hollywood dreams, a real-life drama intensified his spiritual evolution. On route to the set he was acting on, Glenn was rammed directly side on by a speeding car running a red light. Life, it seems, had abruptly ended as Glenn’s soul began its journey out of the body. “There was a sense of fourth dimensional consciousness, and then I popped into the Sun. And I just expanded in consciousness, for that split second of Godhood. But that one experience had a profound effect of my immortality, because I know when I die, that's where I go into Light.”

So I’m working with many different charities now that I’m so privileged to do. I’m working with an amazing homeless charity in London called Trinity Homeless. So my inspirational speaking is mainly around social enterprise and charities.” “So, my message is if we can just love ourselves, if everybody loves themselves and loves who we are and sees their beauty, we don’t have the problems that we have on this planet. It’s simple but it’s so true. It’s just look after yourself and love yourself that’s it.” These wise words echo the sentiment of Supreme Master Ching Hai, who elaborated on the importance of love at the World Premiere of “The Real Love: The Musical,” which is based on Her life story. “We have to be the source of inspiration, of nobility and love, especially if we have been shown how by others example. Without love in our heart we are almost nothing, just a burden to ourselves, to loved ones, and society. Love is not a word on our lips. Love must be our feeling inside and action translated outside. It is helping the environment; it is helping the animals. We like to say ‘Healing ourselves, healing the planet!’” “It would be nice if plant-based foods got the same kind of subsidies and attention that the animal-based ones do; you mentioned organic farmers or small farmers. I think it would level the playing field a lot if either the meat-based [products] didn't get the subsidies that they do, or the plant-based alternatives did because they realize that these are the foods that actually can help promote health. That would be nice to see.” We will conclude this program with the following loving wish from our Most Beloved and Highly Respected Supreme Master Ching Hai. “I wish the World Vegan, World peace. That’s all I wish. Every day I keep repeating that to Heavens, make sure They hear me to help us. Because without World Vegan, there will not be lasting World Peace. I would advise all the leaders to save all the money unnecessary, for war for other things that are frivolous spending. Keep their money and just give money to the poor. And then they would take care of themselves. And the more people are vegan, the fewer government leaders should worry, because they will not be so violent if they have enough work for them to do, to earn their money, to take care of themselves; they would never make any trouble for governments. There will be less suffering, then also less sickness and fewer criminals in the world. Then it’s good for everybody.”

Through his numerous YouTube videos, Mr. Kardinal encourages people to adopt the vegan lifestyle. He is best known for his creative, simple recipes which preserve the French culinary traditions, while using 100% plant-based ingredients. One section of his YouTube channel is called “Mes bonnes adresses.” Here, Sébastien shares video reviews of the many restaurants and cafés he has visited. Sébastien shares his dining experience at “Les Tonton Veg,” a restaurant serving a delightful array of vegan burgers along with exceptional home-made French fries seasoned with “herbes de Provence.” "The planet, it’s not sustainable. And ethically now, thanks to different associations, reality comes out and is on television for everyone to see. This is a real revolution."On December 13, 2017, Mr. Kardinal was a guest chef at the Veggie World festival in Marseille. At Veggie World Marseille, Sébastien presented a cooking demonstration for a vegan “egg-muffin.” This recipe can be found in his book “Ma Petite Crèmerie Vegan” (My Little Vegan Creamery). “The Veggie World in Marseille, I find that it’s also something that goes in an incredibly positive direction and I find it very encouraging. You can see the crowd that has been there all day. It was absolutely crazy. ”Mr. Kardinal works tirelessly to encourage people to adopt the vegan lifestyle. He contributes to the culinary pages of various magazines such as VegMag and Vegetarian Alternatives. He offers free online cooking demonstrations and courses. And, as a predominant French Vegan Culinary chef, Sébastien was invited to participate in the Vegan Festival in Montreal, Canada in 2017 and 2018. At the conclusion of the interview, Mr. Kardinal shared his wish for a vegan world. “My wish would be for things to happen much faster than in reality, but I know it's going to take time. And maybe a vegan world be happening. I will do everything I can to guide people towards it because I think it’s the right thing to do. And I am hopeful that people will understand and change because it’s good.”

Quincy Davis is a successful vegan professional basketball player and vegan restaurant owner. Today, we are privileged to share Quincy’s perspective of how being vegan helped him on and off the court, and why people should adopt a vegan lifestyle. “I traveled around the world and a lot of times I would get sick and I couldn't figure out what was causing it. The medicine wasn't good enough, so I decided to try something different and try vegan, try not eating too much red meat or any pork or anything like that, and it actually made my body feel much better.” “I think my biggest challenge was first of all ignoring all the naysayers who say that, veganism is not the answer. And the second thing is vegan comes in a different form from vegetarian to vegan.” On his vegan path, Quincy is often asked the same question about where he gets his protein from. His response is full of wisdom: “I tell them it is very simple, a lot of the animals around the world that make up this planet are all herbivores. So naturally, they're eating, fruits and vegetables, and they're some of the biggest and strongest of them all. So, I think there's some kind of truth to that.” Quincy introduces us to his vegan diet that fuels his energy needs for 8 hours of high intensity sports activity every day: “For snacks during the day, I try to eat a lot of nuts and grains that gives me another source of protein and energy. And at night time, I try to have all my foods, I am consuming my vegetables during the night time.” Being a vegan athlete, Quincy’s physical performance has had some positive influences on his teammates: “I think they're starting to retune their minds and think that there must be something to this vegan movement that's going and actually some of my teammates have gone vegan.” In addition to physical benefits, Mr. Davis elaborated how the vegan lifestyle helps him mentally and emotionally: “The daily life is, it’s performing, obviously physically, but the mental and emotional, it's just as important, you still need to have a good attitude and feel good inside out. So, along with the physical, the mental, the spiritual, all needs to take place. And I think that having this vegan lifestyle is the only way to go.”

Like many mission-focused plantrepreneurs today, Abhay is concerned about our world’s dire climate change situation and sees veganism as the only viable solution. He launched his start-up company Goodmylk specifically to champion veganism in his homeland of India. Since its launch in 2016, Goodmylk has seen explosive growth. Abhay chose plant-based dairy alternatives as his arena because dairy is the biggest hurdle in India’s rising vegan movement. If anyone is qualified for the task of overcoming this hurdle, however, it would be someone with the drive, intelligence, and business acumen of Abhay. “My family has always been compassionate to animals. They taught me the same values growing up.” Abhay and his sister Varidhi adopted veganism at a young age and became avid animal activists. In her interview with us, Varidhi related how they were able to turn many hearts and minds. “So first, we bring about that point of view, saying, ‘Everybody is compassionate from birth. They have innate compassion. And you should bring that out and then extend the same to all animals, and not just consider a few as pets and the other animals as food.’” “Mom used to make our products, and I would come back home from college, take them in my backpack and deliver them on my motorcycle all over Bangalore.” As Abhay and his mother, Veena, improved on the quality and shelf-stability of their “mylk,” however, word spread and orders began to pour in. Soon, it was a struggle to keep up with the demand. In the years from 2014 to 2018, Abhay was a top student at CMR National PU College in Bangalore, where he studied telecommunications engineering. As Goodmylk began to take off, however, he made the difficult decision to drop out of school and focus on the growing enterprise. In most parts of India, such a move would have courted strong parental opposition. Abhay’s parents, however, threw their full support behind him.

On today’s program, we are delighted to introduce the very active, high-profile French vegan chef, food critic, videographer, and author of numerous vegan cookbooks, Sébastien Kardinal. Mr. Kardinal is also a devoted vegan activist who tirelessly protects the lives of animals through his vegan cooking classes, video demonstrations, and as a food critic of vegetarian and vegan restaurants in France. A vegetarian since 1986, Sébastien has been creating plant-based recipes for over 20 years. Sébastien switched from a vegetarian to a vegan lifestyle after he met his partner, Laura, in 2007. Sébastien and his partner, Laura, wanted to do even more to promote the noble, compassionate vegan lifestyle. Together, they co-founded VG-Zone.net, an influential vegan website, providing critiques of restaurants, identifying places to shop for plant-based ingredients, and, of course, sharing latest recipes that they have invented. Then, in 2018, Sébastien started his own YouTube Channel. His book, “À la Française: La Tradition Façon Vegan” or “French Style: Vegan Tradition” combines traditional French gastronomy with vegan cuisine. A Bourguignon or a Blanquette without animal products? Yes, it is possible, delicious and easy! Sébastien offers excellent ways to preserve the spirit of traditional recipes, while making them in a benevolent way, eliminating cruelty to sentient beings and protecting the environment. In his book, “100 Ideas to Replace Meat,” Sébastien shows readers how to create delicious vegan versions of chorizo, ham, steak, and chicken nuggets. There are also delicious dishes which are full of surprises, such as vegan oriental meatballs, chick'in with ginger, and mini burgers sautéed with onions. In the book, “My Little Vegan Creamery,” Mr. Kardinal introduces simple ways to make vegan alternatives for many kinds of dairy products. Using nuts and seeds (cashews, almonds, sesame seeds, etc.), combined with fermentation techniques, Sébastien creates delectable vegan butters and creams, as well as many types of vegan cheeses, including feta, ricotta, and mozzarella. His wonderful recipes convey the clear message that we can still enjoy the French culinary traditions while maintaining the noble, compassionate vegan lifestyle.

Let’s start by hearing how changing to a vegan diet altered John’s perspective on animal cruelty. “The decision to stop eating animals and to become vegan was the best decision I’ve ever made in my life. I did it because I didn’t want to contribute to animal cruelty anymore. I’ve definitely felt like a weight has been lifted from my shoulders, and it’s been a beautiful thing. I feel like I can now live in confidence knowing that my actions from day to day aren’t causing unnecessary animal suffering, because if I’m not willing to cause harm to an animal, why should I pay someone else to cause harm to an animal?” “Most people consider themselves animal lovers, and most people go through their day, day to day, eating animals. And they go through their day, day to day, not thinking about the impact that that has. But what you, and me, and many of the viewers here today understand, is that through our food choices alone, we impact dozens, dozens of animals every single year. Hundreds, or probably thousands, potentially even tens of thousands over the course of our lifetime.” Next, John shares with us his approach to using social media as a successful tool to create awareness for the plight of our animal friends. “I look at the treatment that farm animals face in today’s world as something that is legal, or that is just absolutely cruel and unbelievable, but it’s legal and standard practice. There’s a lot of reasons for that, most of them surround money, and so what farm animals experience in 2020 in today’s world, is absolutely awful. The plus side is, the vast majority of people don’t know, so that gives us an opportunity to raise awareness and to talk about what farm animals are experiencing.” “Social media really provides us this incredible opportunity, whether it’s us as animal advocates, or other people fighting for other causes, social media allows us this great opportunity to spread the word, to raise awareness, to advocate in a way that humans had never been able to advocate before. In the history of humankind, we’ve never been able to send messages in an instant, to any corner of the globe in an absolute instant, in massive numbers day in and day out.”

It is often quoted, “When a disciple is ready, the Master appears.” Following Glenn’s near-tragic car accident and powerful near-death experience that gave him the cosmic view of how life exists beyond the physical, a bigger spiritual awakening was waiting for him. Realizing that destiny had guided him to this point, after his deep study of Master’s teachings, Glenn decided to travel to Taiwan and receive initiation into the Quan Yin method with Supreme Master Ching Hai. The more Glenn pursued his spiritual practice, the more he began to relate to the roles he had played over his years of acting and the meaning behind them. So, it dawned on me through recapitulation and looking at my life, that I'd been tested. Before long, it dawned on Glenn that his story and his philosophy represented the universal human struggle of this world. He decided to make a movie in the hope of awakening the viewers to seek and embrace a spiritual change in their lives. “This movie is telling us we're all being tested, but it's also to know how to react to that test, and not slide down the snake in Snakes and Ladders, but continue up the ladder, through humility, through understanding, through not being a victim, through being grateful for life.” “Every person that comes into your life, there's a reason. So, you want to have a compassionate understanding of that reason. So, you're forgiving yourself, you're coming from compassion. Always eat vegan, you must always do that. And always do your meditation and practice. The only key is love.” This echoes the message Supreme Master Ching Hai has been graciously spreading around the world for over three decades. “The essence of life is love. The essence of God, of Buddha, of Allah, is love. There's nothing else but love. When we make the choice of love, that's the highest choice, the noblest choice, which is our true Self, we will feel that we are very near to God, very near to Buddha.” Actor Glenn Ratcliffe would also like to dedicate this special message to Supreme Master Ching Hai: “To Supreme Master Ching Hai: I love You with all my heart. You are my Master, I surrender to You; and I'll serve You till the day I die. You're a gift to the planet and I will continually send You all my love.”

I just recently started an organization called, 'V.O.I.C.E4Change,' which you can see on the t-shirt. And 'V.O.I.C.E4Change' is an idea and a concept that I came up with about a year ago, and I decided to actually act on it. And what 'V.O.I.C.E4Change' does is, we advocate for animals, but we do it through spoken word poetry, song, and dance." Mr. Mitchell recites his poem, “Sandwich and Shoes.” Mr. Mitchell also advocates for human rights and animal rights on his social media platforms such as Facebook and Instagram. Let’s enjoy another poem he read in 2019 while attending the National Animal Rights Day in New York City, USA, entitled, “It does a body good.” "My plans for the future are to become more active, to be a better advocate, to learn more, to grow as an activist, and to spread the message of veganism, to spread the message of compassion so that more people will go vegan. More people will get involved in fighting for the rights of animals and more people will want to learn to love, appreciate, and respect animals, and do everything in their power to protect them as opposed to using them as commodities, as opposed to eating them, wearing them, using them for lab testing and things of that nature." "A very compassionate place where people aren't judged by the color of their skin, their ethnicity, their nationality that we treat animals with respect and protect them and just overall love and compassion. I think that we would have a better world if more people had compassion for what other people are going through and dealing with and try to get a better understanding of who we are and appreciate our uniqueness. We're all different. And I think that's the beautiful thing about life, is that we're not all the same, and that we're very unique. And we can learn from each other and learn to respect each other's beliefs without harming other beings, and not judge each other based on where we're from or who we are, but actually embrace each other because of that, and learn from each other and defend each other. That's the world I want to see."

Veganism has exploded in the last decade, and its rise in popularity is changing the landscape of artisan baking as well. Today, it is our pleasure to explore this coming of age of vegan baking as an artform, we are fortunate to catch up with the award-winning baker & pastry Chef Rodolphe Landemaine of France, at this 100% vegan bakery in Paris, “Land and Monkeys.” Prior to enrolling in the Compagnons du Devoir and Tour de France, Rodolpphe learned the fundamentals of his craft at the vocational school CEPROC (the European Center for Culinary Professions). After six years of education and training, Chef Landemaine opened his first bakery in Paris at the age of 27. In 2014, at the height of his career, Chef Landemaine had an epiphany that would take his life in a new direction. At the time, Rodolphe was a vegetarian in the tradition of his family. “So, I reflected on it all a bit, and it became clear. I became vegan in my heart.” One year after turning vegan, Chef Landemaine set to work looking for ways to veganize the baked goods in his bakery chain. He gradually increased the number of vegan offerings in his stores, with the goal of eventually turning them all fully vegan. “For us, it was really important to say: ‘We want to keep the signature items and classics of the French gastronomy and make them vegan, to show everyone that it is not just a dream, that it is possible to succeed in making these pastries vegan.’” During that time, he also conceived the idea of opening a fully vegan pilot store from scratch. The result was the launch of the 100% vegan bakery “Land and Monkeys” in February 2020, in the heart of Paris. The store has received rave reviews both from the public and his peers.

In today’s show, we are honored to have Quincy share with us why he decided to open a vegan restaurant after he reached the pinnacle of his career: “What inspired me to take the next step and open up this vegan restaurant of Uncle Q's is that, first of all, I love to eat, like most people. And the second reason is that many people want to know and how do you make a vegan burger or how do you make a vegan taco or just vegan, sandwiches. They just want to know. So, you have to show people, you have to show them that this is possible and it can be done. You can make a vegan burger. You can make vegan cakes, vegan desserts, ice cream. All that stuff can be done not using milk, egg or animal products.” “The main reason why people should become vegan is because, it's more healthy, it’s a more healthy and sustainable lifestyle for our bodies but not just our bodies. Because we, as human beings, we have a big ego to think that we’re the only ones in this world but it's a whole ocean of fish and environment that thrive off our ecosystem. Not just for us, but also for them, the animals, the world, the environment. We're all living in this world together. So, vegan lifestyle is the most sustainable it's the best option to sustain a healthy life for the world.” “The hopes and dreams for the future, not just for me, but just for the world is that breeding livestock is really causing carbon emissions more than the vehicles and the airplanes around the world, that's releasing carbon monoxide and it's really hurting the planet. So again, we don't have to participate in the mass production of these animals for human gain or for human appetite.” “If you are vegan, continue 加油! (Go Ahead!), continue doing your job of making yourself healthy and saving the world. And those of you who are not vegan, take time to try a vegan hamburger. A vegan dessert. And I promise you, you would be very much surprised about the taste and about how delicious it is. So, just take a stance and give it a try. That's all I ask.”

Chef Radley has not only walked the vegan way for the last 25 years, but has also made it her life’s work, to rally the world towards a vegan era in which all beings can live in peace and harmony. Perhaps Chef Radley’s greatest contribution as a vegan advocate to date is the Vegan Chef Institute, London’s first vegan chef school, which she opened with co-founder and health coach Chantal Di Donato in November 2018. Over 100 vegan chefs have graduated from the institute in less than two and a half years. She is considered a pioneer of simple modern cooking that is tasty, fun, and creative. She has been featured on national TV shows, such as the award-winning Sky News UK and ITV’s “Living on the Veg.” She is the author of two cookbooks, “Love.Food: A 28 Day Plan to Let Go of Chaotic Eating & Fall Back in Love With Food,” and “Bo’s Book: Recipes from The Vegan Chef School and Tails from Miracle's Mission.” “When I went vegan, something lifted, and it was through my explorations into fresh, unprocessed, and animal-free food that I fell in love with a way of eating that nourishes us and allows us to flourish. I discovered that real food is a life force." "I’m here for them. I’m a protector. A protector of those who cannot protect themselves."To encourage as many people as possible to become vegan and stay that way, she has uploaded hundreds of cooking shows online showcasing free recipes that are quick and easy, yet satisfying for the palate. During the Covid-19 pandemic, Chef Radley conducted more than 150 free, live-streamed “cook-along” shows on Facebook (as of January 2021) to help people to make healthy dishes at home.

Abhay is also highly gifted in the arts. He is the author of a vegan advocacy novel, titled “The Green Monk,” and is an accomplished Indian classical singer in the Carnatic vocal music tradition. It was Stephen Sturdivant, a vegan angel investor in Dallas, Texas, who infused Goodmylk with a seed funding of US$400,000 in 2018. Today, Goodmylk’s products are produced in facilities located all over India. Abhay is quick to acknowledge that he owes Goodmylk’s success in no small measure to his team of dedicated professionals. In April 2021, Goodmylk teamed up with one of India’s most prominent athletes, 24-year-old tennis professional Vishwajeet Sangle. In his nine years as an animal rights activist and plantrepreneur, Abhay has earned numerous accolades and awards. He has the following insight for people in search of a direction in life: “I think it's important to focus on how to be altruistic in our lives. I would argue that maybe one of the best purposes to have in life is to leave the world a better place than when we came into it. So, I would recommend that for anybody who is willing to do something more for the planet, maybe look at plant-based food, maybe look at how you can add value to vegans, and how you can add value to animals and the more marginalized groups of people that share our planet with us.” When it comes to veganism, the world-renowned humanitarian and fully enlightened spiritual Master Supreme Master Ching Hai has a similar message for humankind. “Dairy is included together with meat because the cruelty and torture is the same, and the end result is a horrible death for the poor animals. So please, everyone, again: Forego the disease-ridden animal products and join instead in adopting the lifesaving, healthy, compassionate, life-giving vegan diet. We were honored to feature the award-winning French chef Rodolphe Landemaine, who opened the 100% vegan bakery shop, Land & Monkeys, in the heart of Paris in February 2020. Chef Hermé is one of the most celebrated pastry chefs in the world. “Pierre Hermé was here three weeks ago to sample all the products. I was one of his students. He was very curious about my initiative, and asked me if he could come to the bakery for a taste-test. We tried all the pastries, and there wasn't one that he didn't like.” So, what is Chef Landemaine’s vision for Land & Monkeys? “We really wanted it to be something that brings together as many people as possible. We didn't want it to be divisive. We knew that 80% of the customers around our bakery are not vegan. So, the common denominator that we want them to come together around, was the element of gourmet.” “It was an intellectual challenge. It was also a technical and technological challenge. We worked for 2 - 3 years, with some professionals at my bakery doing just research and development around that.” One of the biggest hurdles Chef Landemaine had to overcome was the “pâte à choux.” Pâte à choux, or choux pastry, is a dough that is traditionally made with flour, water, butter, and eggs. To create the perfect vegan pâte à choux, Chef Landemaine and his wife set off on a quest to find the perfect egg white substitute. In 2017, they turned to food engineer Anne Cazor, founder of Scinnov R&D and Production Laboratory, for help. The result was Yumgo Blanc. In October 2019, Yumgo won the European Plant-Based Protein Award for start-ups in the food ingredient category. In 2018, the Landemaines joined hands with Anne Vincent, an international management consultant and marketing expert, to form a start-up called Tamago Food Company for the purpose of marketing Yumgo Blanc. In 2020, they followed Yumgo Blanc up with a vegan egg yolk called Yumgo Jaune.

Today, we are honored to share with you an interview with Mr. Tim Thorpe, a Campaigns and Policy Officer of The Vegan Society. The Vegan Society is a non-profit organization based in London, U.K and has been promoting the plant-based lifestyle since 1944 when one of its founders, Donald Watson, first introduced the word vegan to the world.With a background in environmental conservation, Mr. Thorpe assists the organization with research, policy work and campaigns to promote the benefits of veganism. He also leads the Grow Green Campaign, which is helping the current agricultural system to change to a plant-based operation. With the climate emergency, the Grow Green Campaign is unwavering in bringing awareness of the importance of rapid and strong reductions in emissions from animal livestock raising which severely causes environmental damage and climate change. The Grow Green campaign puts forward essential policy recommendations to transition to plant-based agriculture and other sustainable forms of land management. They covered areas such as providing subsidies to farmers that produce food intended for direct human consumption; allotting funds for research on protein crops and how to boost yields; implementing a farmed animal tax; encouraging the serving of plant proteins in public canteens; and consulting on policy with a wider range of stakeholders.Demand plays a key role in food production adjustments and policy alterations. The more people make the connection and switch to a vegan diet, the closer we get to reaching the tipping point where the governments and food producers take action. “I think people are getting increasingly interested in the importance of vegan diets. So, for some people, they might initially be interested in health and they might be looking for healthier foods and as they learn more, there’s opportunities there to teach them about sustainability as well. Or people might initially be interested in animal rights, the welfare, and compassion for animals. And then through those conversations, we can introduce the subject of sustainability as well. It’s about reaching people where they are and what they’re interested in to begin with, and making sure that you give them the information that’s relevant to them at that time.”

Abhay’s social entrepreneurship has earned him the distinction of being the youngest Indian entrepreneur to make the prestigious Forbes “Asia 30 Under 30” list – in 2019, at the age of 22. Abhay’s vegan journey began at age 13 when his father showed him the truth about the violence that takes place every day in dairy operations across India. “I think the enormity of abuse that goes down in slaughterhouses, dairy farms, and egg farms are really a horrifying tale in the history of humanity.” “I think all of us, inherently, do not like animals being hurt. All of us are inherently compassionate towards animals, but we're not confronted with the truth that animals are hurt every day in slaughterhouses, egg farms, dairy farms, etc. And I think this should stop because it's a blight on humanity.” Apart from the issue of ethics, Abhay also sees environmental degradation and climate change as powerful reasons for the world to switch to a vegan lifestyle. Abhay’s concern about the unsustainability of a meat and dairy diet is rooted in solid science. One way Abhay tries to loosen this firm cultural grip of dairy is to raise public awareness about the negative health consequences of dairy consumption via social media and public speaking. Another way Abhay tackles India’s attachment to dairy is to create dairy alternatives that are not only affordable and accessible, but also “functional.” Abhay is sometimes confronted by well-meaning citizens as to what would happen to the livelihood of the estimated 8.5 million dairy farmers in India if dairy were displaced. This is his response. “They can manufacture plant-based alternatives. And by setting up and financially empowering these hubs, we get to create entrepreneurial hubs in every single corner of the country.” Abhay points out that this is especially true if the government would recognize the negative impact of dairy on the environment, public health, and the economy, and direct the subsidies and tax cuts currently afforded to the dairy industry towards plant-based operations.

Today, let us head to Paris for a tour of Land & Monkeys. We are fortunate that Mr. Landemaine will be our personal guide! "In a French boulangerie-pâtisserie, there are four trades. There’s the salty part for lunch; there’s the sweet part with the pastries; there’s the viennoiserie for breakfast; then, there’s the bread." Mr. Landemaine will now show us some of his sandwich offerings. "We substituted all the animal products (with vegan ones), and we manage to have 200 customers come in for lunch in this small eatery." Mr. Landemaine says that the most popular sandwich at Land & Monkeys is the Campagnard, or the “Rustic.” It is a sandwich that contains his homemade “pâté.” "People don’t even realize it’s a vegan 'pâté.' Now, we incorporate hazelnuts, lentils, and so on, to produce a vegan 'pâté,' and the end-result is extraordinary. For the pastry part, the sweet part, we kept the great classics of French bakery: fresh fruit tartlets, lemon meringue tartlets, and there is the chocolate cake with 100% cocoa.” “And for the bread, we have breads from all over the world, namely, the signature breads of each country; for example, the German 'schwartz brot,' the 'sourdough bread' of Anglo-Saxon countries, the Italian 'focaccia,' the French 'baguette.' We use 100% organic flours milled from ancient wheat.” “We urgently need to make this switch. 70 billion (land) animals are eaten every year. This is such an astronomical number, which is not even quantifiable by the common mortal, There is an absolute urgency for ecological reasons, for ethical reasons, and for health reasons to switch to a predominantly plant-based diet. For me, my initiative as a baker is to contribute a small piece of the puzzle, but we need millions of people to come together, so that very, very quickly, humanity approaches a diet of veganism. On today’s program, we are delighted to introduce a multiple-award-winning vegan chef, author of many very top-selling vegan cookbooks, and vegan culinary consultant and trainer with more than 20 years of experience in developing unique and innovative gourmet vegan and raw food cuisine, including raw specialities. He is none other than the Celebrity Chef Mark Reinfeld. “In 1989, I was on a Kibbutz in Israel, and I became vegetarian during that trip. I started seeing animals in their natural setting, and just experienced love and compassion for them, and that started me [on] becoming vegetarian. And then, shortly thereafter, I started learning about the practices of the meat, of the dairy and egg industry and especially regarding factory farming, and that led me to become fully vegan shortly thereafter.” “I've brought my life into my career. I want to put my energy into helping the animals, helping the planet, and helping people live healthier. So, that's the most rewarding. I mean, as a chef, it's very satisfying to prepare food, serve it, and have people like it. You get a nice feeling from that. I like referring to it as food activism because we can say why it's important to eat plant-based or vegan, and everyone can say “OK, I'm onboard.” But then if they have foods that are not tasting good or satisfying, then it's not going to go very far. So, by helping people realize that they could have food that’s delicious and satisfying, good for their health, good for their environment, and can help protect animals, I think, it's a win-win all the way around.” The remarkable vegan chef co-founded the Vegan Fusion Culinary Academy with his wife, Dr. Ashley, and friends Courtnay and Dave Dietz. The Academy opens in Boulder, Colorado, to train vegan chefs and also to provide vegan cooking classes for the public. Mark makes the following passionate opening statement on the Academy’s website: “The Vegan Fusion Culinary Academy is the culmination of my dream to bring mindfulness, passion and compassion to the culinary world by encouraging more people to discover the joy and benefits of plant-based cooking.”
