Kelp has two important bioactive compounds that you might not know about: fucoxanthin and fucoidan. Interestingly, these compounds are not found in land-based vegetables. Kelp’s robust antioxidant and anti-inflammatory properties have the potential to help prevent chronic conditions such as obesity, diabetes, cardiovascular disease, and cancer. Moreover, fucoxanthin has demonstrated protective properties on the liver.
