Today, Ms. Baaran will show us how to make a vegan version of Tahchin, another delicious traditional Iranian dish. Tahchin is a savory rice cake; it's stuffed with ingredients that are not only flavorful but also full of nutrients. The main spice in this dish is saffron, which is mainly produced in Iran. Its vibrant color is used as a coloring, and it has a unique fragrance that makes a dish more appealing. "For vegan Tahchin, we need 500 grams of rice. I soaked 500 grams of rice in water, cooked it for 10 minutes, and then strained it." "We have about 400 grams of thick vegan yogurt. And one unpeeled eggplant, which I’ve cut into smaller pieces." "We add soy sauce and also herbal salt to the soy protein." "Now I am ready to mix all of them together in order to incorporate the soy sauce and herbal salt into the soy protein." "We add oil to our pan and heat it up until it’s hot, and then we add the soy protein and fry it until it’s cooked." "We add the eggplant to the pan. This is the eggplant that we’ve cut into smaller pieces. Then we add a bit of water into the pan and then add the hot pepper." "Mix everything together and add a bit of water to it; a little more water, not too much. Then put on the lid and leave it to cook in its own steam." "Now, we add our vegan yogurt into a big bowl that we have here. Then we add in our spices, some pepper, curry powder, hot pepper paste, and some oil. Now it’s time to add the saffron liquid to it." "We gradually add the pre-cooked rice into the bowl and let the vegan yogurt be absorbed." "I will add some coconut oil to the bottom of the pot." "The inside of our pot is completely oiled; it is a mixture of oil and saffron liquid. Now the pot is ready for the rice and the other ingredients. First, we add a layer of rice, to which we’ve press down to the bottom of the pot. Then we add our soy protein on top of that. It’s best that the soy protein doesn’t stick to the sides of the pot. Then add another layer of rice, and we press everything down again. Now it’s time to add our eggplant mixture to it." "Then add another layer of rice, and it covers the last layer. Our Tahchin is now ready to be cooked for one hour." "This dish is good for celebrations because it has a beautiful appearance."

Her mission to introduce plant-based meals and nutrition to schools began with the local PTA (Parent Teacher Association) nearly two decades ago. Advocating on behalf of children, the environment and the animals, through LGK, Barbara has developed plant-based nutrition and culinary education programs using a multi-cultural approach. The LGK programs include plant-based educational presentations and nutrition resources to school food professionals and students. Barbara studied in theater with a Bachelor of Fine Arts degree which has really complimented her abilities in vegan outreach and advocacy with the Lean and Green Kids school programs. Barbara is also a children’s book author, and published Eating Lean and Green with Super Foods to Save the Planet, in 2016, and Jack and the Bean Stew, two years after. In particular, Barbara Cole-Gates’ nutrition book, Eating Lean and Green with Super Foods to Save the Planet, is a useful tool for teachers. It’s great to see Barbara’s and many vegan supporters’ efforts gaining momentum to reach a milestone in California, in a dedicated move towards the compassionate and healthy way of living. We also look forward to seeing broader positive changes for the whole nation, as well as the entire planet in the very near future.

Let’s now enjoy their cooking demonstration. The finale of the jackfruit and taco. Here we go. We’re going to turn it on. We’re going to start by taking a can of jackfruit. And then we’re going to throw in 32 ounces (950 milliliters) of vegetable broth. Turn your pot on high. And then we’re going to add in two tomatoes, chopped, and also one jalapeño, one serrano pepper. And then a pinch of salt. And then we have two tablespoons of paprika. And then we’re going to add three tablespoons of Bragg’s Coconut Aminos, organic, of course. This is a South African smoke blend. And then a chili-lime seasoning blend. You guys can season together. Double time! You’re going to fill your taco with your jackfruit mixture. May we have some slaw? And then you're going to drizzle your (vegan) cheese sauce. Like that. There’s your taco.

In today's show, we will visit Loving Hut Smile, one of the Loving Hut vegan restaurants in Korea. The wide variety of lunch boxes are the most popular items in this vegan restaurant. One customer just ordered their popular soy cream pasta. Let’s watch how the dish is prepared. Add sliced Chinese cabbage, carrots, oyster mushrooms, and bok choy to the pan. Add pre-cooked organic pasta noodles, and turn on the gas stove. Drizzle some sunflower oil. Add three teaspoons of bamboo salt and two teaspoons of vegan seasoning and stir-fry the ingredients on high heat until the bok choy is wilted. Then add 240 milliliters of soy milk and keep stirring to prevent the ingredients from sticking to the bottom of the pan. When the soy milk boils through, pour the pasta into a takeaway container. Grate some vegan cheese over the top of the pasta. Lastly, garnish with some tender green leafy vegetables to complete the soy cream pasta. It looks really yummy! “Our initial thought was that vegan lunch boxes are a convenient and great way to promote veganism. We had foreign guests in Korea who were looking for halal and vegan food. So, we tried our best to provide them with vegan lunch boxes; we received great feedback from our guests. There are more than 20 dishes that can be ordered and served as lunch boxes. There are also about 30 dishes for catering that can be ordered.”

With the natural advantage of its geographic location and favourable temperate conditions, the Hangzhou City government, in recent years has been leading the effort of promoting the veg culture development nationwide, as well as reaching out globally, with a new epithet for the city - “The Veg Capital of Southeastern China.” In May 2019, one of the world’s largest vegan lifestyle expos known as Veggie World - which is currently held in 18 cities across eight countries - chose Hangzhou as its first point of entry into China. This eye-opening expo introduced Chinese consumers to the global vegan trend, and the healthy, green, and natural vegan lifestyle. To celebrate International Vegetarian Day, the city’s Commerce Bureau sponsored the fourth Hangzhou Vegan Culture Festival in November, 2019. The event was organized by the Hangzhou Vegan Association and held at the Xiangji Temple square. Many fascinating activities were held, such as food tasting, introduction of the benefits of eating veg, and cultural exchanges, encouraging Hangzhou citizens to follow the compassionate trend of a plant-based diet. “And if Chinese blaze the trail on vegetarianism, then we will have hope. The Trinity of Plant-Based Education: Liberation from an Animal Diet 

On today’s program, we review three different books, all of which express the same powerful message for the physical, emotional, and ecological benefits of a plant-based lifestyle. These three books are, “Eating Animals” by Jonathan Safran Foer, “The Engine 2 Diet” by Rip Esselstyn, and “The China Study” by T. Colin Campbell, PhD and Thomas M. Campbell II, MD. The author discusses what it means to eat meat, coming from an inhumanely industrialized system, which causes immense suffering to animals and rampant destruction of the environment. “Eating Animals” quickly became a New York Times bestseller, and later formed the basis for a documentary of the same title. The film is directed by Christopher Quinn, and narrated and co-produced by renowned actress, Natalie Portman, who, after reading the book, immediately switched from a vegetarian diet to being fully vegan. Our next book is, “The Engine 2 Diet” by Rip Esselstyn. Rip is a former Austin, Texas, USA firefighter, professional triathlete and health activist. Through “the Engine 2 Diet” program he developed, he transformed the wellness of the entire Austin Fire Department. “The Engine 2 Diet” is a low-fat, plant-based plan that seeks to prevent or even reverse illnesses such as heart disease, diabetes, Alzheimer’s, and cancer. For over 40 years, Dr. T. Colin Campbell, has been on the forefront of nutrition research and the advocacy of a low-fat, whole food, plant-based diet. His legacy, “The China Study,” is one of the largest, most comprehensive studies on the relationship between nutrition and cancer, heart, and metabolic diseases ever conducted. It was launched through a partnership between Cornell University, Oxford University, and the Chinese Academy of Preventive Medicine, using data collected over a 20-year time span. In conclusion, these three inspirational books take the readers on different excursions of discovery concerning the food we eat, along with the effects it has on humans, the animals, and the Earth. The unifying message is clear: For us to prosper in health and happiness, we must quickly turn away from meat, dairy, fish, and eggs and embrace the life-saving, benevolent vegan diet today!

We’ll start by exploring how staff members created a “Vegan paradise”at the Loving Hut, thanks to Supreme Master Ching Hai’s thoughtful advice on protecting our environment and all living organisms. Supreme Master Ching Hai gave the Loving Hut staff specific tips on how to minimize plastic usage at the Hotel, as well as other recommendations for cleaning in a highly hygienic, yet environmentally-friendly way. While visiting the Hotel, Supreme Master Ching Hai provided helpful hints on recycling organic waste as well as garden care. Let’s continue by listening to Supreme Master Ching Hai, as She shared precious insights about the connection between spiritual practice and work, during Her discussion with staff of the Loving Hut Vegan Hotel in July 2016. “Use the work as one of the practicing methods. You have to know that. Anything you do, you just have to think of the relation to karma. Call it karma Yoga. So, take every opportunity and always recite the Five Holy Names when you’re working. That also counts like meditation, understand? Also, it cleans your karma and prevents negativity from entering your being.” We deeply appreciate Supreme Master Ching Hai for giving us the opportunities to work in a pure environment that benefits our spiritual growth. Building a Peaceful Planet for All Beings - Youth Climate Movement Torchbearers Climate NOW & the Sunrise Movement, Part 2 of 4

Today, we are privileged to bring to you one of the most talked-about youth climate groups in the USA today, the Sunrise Movement. Sunrise Movement was founded in 2015 by a small group of like-minded youth on the East coast of the USA, who envisioned a revolutionary overhaul of the country’s climate policies matching the scale of our planet’s climate emergency. Sunrise Movement does not have formal membership, but is estimated as of September 2019 to be comprised of about 80,000 active supporters, most of them in their teens or 20s. Sunrise Movement’s Kate Cragg touched on the perilousness of the situation: “This is a turning point in history. This is a crucial thing that our species has never faced before. So, we have a responsibility greater than any other generation in history.” moment. Sunrise Movement’s activism is modeled after the civil rights movements of the 1900s. Towards its main goal of avoiding a 2°C global temperature rise, Sunrise Movement employs many strategies. The Sunrise Movement gained nationwide recognition in November 2018, when it staged a sit-in protest. The protest received intense media attention. Sunrise Movement is one of the few climate groups in the country to offer a clear and concise list of governing principles, known as the Green New Deal. The principles outlined in the Green New Deal call on government to aggressively regulate the two major greenhouse gas emitters: fossil fuel and animal livestock-raising, to commit to one hundred percent clean, renewable energy, and facilitate a just transition into climate stabilizing industry employment for people whose jobs formerly contributed to global warming. Welcome to today’s show, where we will show you how to make a traditional Indonesian snack, crispy fried pastel. Pastel is a delicious savory snack that is sold by street vendors and in markets throughout Indonesia. It consists of a thin pie crust filled with vegetables and then deep-fried. “Today, I invite all of you to join me in making one of Indonesia’s favorite snacks called pastel. When making pastels, we will go through two processes. The first is making the outer dough, and the second process is making the filling.” “We will dice the potato into small pieces like cubes. Next, we are going to cut the carrot.” “Next, we’re going to cut the celery.” “The ingredients for the filling are ready now. We will then make the dough for the skin. First we will use 500 grams of flour. Then we will put 100 grams of (vegan) margarine. Next, we will also add one teaspoon of salt. After that, we’ll add water a little at a time while stirring. We’ll keep kneading it until it becomes a smooth paste, and there’s no leftover flour.” “Then we leave it. We cover it with a cloth. While waiting, we will make the filling. Next, we’re going to cook all of these together.” “We’ve already let our dough rest for 20 minutes; it has become bigger like this.” “And then we divide it into several portions. We are going to shape it into a round ball. We flatten it more or less like this and then we fill it.” “First, we fold it like this, and we seal the edges tightly. Then from one end, we crimp the edges like a rainbow.” “I will put oil in the pan. We pour the oil to fill half of the pan. OK. Last Sunday, vegan Chef Reina Montenegro showed us how to cook the delicious Filipino dish Kare-Kare. Today she will share with us another traditional recipe, vegan lumpia, a spring roll that is very popular in the Philippines. “And today we’re going to show you how to make Vegetable Lumpia. So, my ingredients are flour, mushroom powder, black pepper, some water, salt, soy sauce, oil, mixed vegetables, cabbage, and some wrappers. We’re going to add some oil in the pan, about two tablespoons. Then we add our mixed vegetables. From here we can add our cabbage, and don’t worry about the cabbage because it’s going to wilt down. While this is cooking, we’re going to add soy sauce. We’re going to add some mushroom powder, some pepper. What we’re trying to do is wilt the vegetables and take all the liquid from it. So when we start rolling these, they won’t be soggy. This is pretty much done and turn off the heat. We’ll put it into our bowl to cool down. So the important thing is we need to cool this down before wrapping, so it doesn’t go through the wrapper. The next step is to roll our Lumpias. Do you remember the mixture we did earlier when we stir-fried the vegetables? We’ll take a tablespoon of that. We’ll put it in the center of our wrapper and the trick is we’re going to roll this really tight. We’re going to start frying right now. Just pan-frying it, so, a little bit of oil on medium-high heat right here. And what we’re really doing here is we’re just heating up or cooking the shell because the insides are already cooked. So, once all sides are done like I can see that most of these are done now, we’re going to take them out and put it in on our paper towel. I would wait to eat this until it’s cooled down because you don’t want to burn yourself. So to garnish this dish, we’re going to use some arugula and put it on a plate. You can also use whatever vegetable you like that looks prettier. And for the sauce, we’re using soy sauce and sambal. It’s a chili paste. Add it in with your soy sauce and then put it on the side here. And then we plate it. You can plate it however you like, but make it look pretty and appetizing. And you can enjoy your Vegetable Lumpia.”

In order to create a strong appeal and reach out to as wide an audience as possible, Mahesh set out to interview vegan advocates from as many diverse backgrounds as he could find, crossing borders of ethnicity, professions and countries in the filming process. With his meticulous professional training in advanced systems approach, coupled with his astute engineering mind, he was able to condense the vast amounts of information and opinions on the topic into this persuasive and emotionally powerful film. Mahesh’s documentary starts off with discussing various problems associated with animal raising, but then gets right into the solutions. He notes that due to increased demand, innovative plant-based agribusiness and food production companies are bringing sustainable solutions to feed the planet. As such, he points out that the power of change really can lie in an individual’s hands. For decades, with Her great foresight, Supreme Master Ching Hai has been tirelessly informing, advising and alerting of the extreme risks and dangers unfolding from animal exploitation as exampled by an interview in 2009 with Irish journalist and author, Dr. Ben Murnane. “The health experts and the people who study viruses informed us that there is a grave concern. Namely, this pandemic could become more and more dangerous if the virus mutates further. And in these extremely unhygienic settings, the different viruses from the animals easily mix with one another to create new, more lethal flu viruses. So if we don’t stop the mass animal raising industry, then as Mrs. Garrett said, this factory farms’ unnatural industry will one day spawn a severe pandemic that will dwarf that of 1918. I am hopeful still that people turn to (a) vegan diet, organic vegan diet. First, to save themselves. Second, to save the planet.
