I am very happy today to bring you a number of highlights from 2019! 2019 has been another great year, marked by headlines trumpeting the vegan lifestyle. We have seen amazing movements in the vegan food industry, with Beyond Meat and Impossible Burger both reaching sales beyond expectations through the big fast-food chains like McDonalds, and Burger King who are rolling out vegan burgers in every one of the 7,300 outlets in the USA. It’s been an amazing year so far, with so many exciting, positive things and kind actions and awareness happening around the world! Greta Thunberg is a dedicated young environmentalist, who is petitioning the politicians around the globe to immediately address climate change through her “Skolstrejk for Klimatet,” (School Strike for Climate) a movement that has gained worldwide momentum on this urgent matter. So I hope you take heart. Remember to be vegan, and help all your friends and family do the same.

So there have been some studies that show as many as one in three Brits now follow the flexitarian diet, even if it’s just a few meals in a week, it still helps the animals, and it helps to make veganism mainstream. As a way of promoting a healthy plant-based lifestyle, the Vegan Society has been actively encouraging the UK government to change their existing policies, they’re calling for those subsidies to be moved to healthy plant foods, push government money to sponsor the foods that are good and sustainable for people, so we’ve got an all-round benefit to it.

Closely following the Renaissance, the Age of Enlightenment from the 17th to the 18th century, was a time in Europe marked by an emphasis on empiricism, which is to say, reason and scientific methods as a way to true knowledge. It was a new era in Western thought that saw significant advances in such ideals as individual liberty, democracy, women’s rights, and the separation of church and state. Eminent Enlightenment philosophers such as Voltaire of France and Genevan Jean-Jacques Rousseau, spoke about the sentience of animals.

Let’s now make a raw salad. We will make them look like they’ve been sautéed. First, choose the vegetables. Many vegetables can be used. We usually use Chinese kale or Chinese cabbage. Today I have chosen spinach, and we usually use only the leaves as they are more nutritious and taste better. We like to give these vegetables a sautéed effect, but how is it possible without cooking? The trick is that we mix some salty ingredients in the leaves. Those leaves will soften gradually. Then, add oil to make them look like they’ve been sautéed.
