I have a tip on how to make a yummy, nutritious raw carrot salad. Start by using a vegetable peeler to shave the carrot going from the large to narrow end. Repeat this process for two more carrots. Set the carrot shreds in a bowl and add in two chopped green onions and leave it aside. To make the dressing, combine the following ingredients in a little jar or a small bowl: 2-3 grams (1/2– 1 teaspoon) of grated ginger, 8 milliliters (1/2 tablespoon) of sesame oil, 15 milliliters (1 tablespoon) of rice vinegar, 15 milliliters (1 tablespoon) of agave, 15 milliliters (1 tablespoon) of lime juice, 15 milliliters (1 tablespoon) of soy sauce, a pinch of salt and pepper and red chili flakes. Mix it thoroughly or shake well if you’re using a jar. Pour this mixture over the shaved raw carrots and green onions and toss everything until they are coated with the dressing.
