Today we are excited to have Mr. Narit Dechkhamsriwat on our show. Narit will show us how to make two beautiful, delicious, and nutritious vegan Lanna dishes: Kaeng Khae Curry and Steamed Curry Mushroom Parcels. “We can start cooking the Kaeng Khae Curry. Start by turning on the stove, keeping it at medium heat. We start with the coconut oil. Put that in and wait for it to heat up. Now we put in the curry paste and fry it until it is fragrant. Reduce the heat a little bit, so it is not too hot. Fry until it is fragrant until it is golden brown. If it starts to get sticky, add a bit of water to make it less sticky. Now we can put in our mushrooms and stir-fry until cooked. At this stage, add a bit coconut milk. Now, put in the snake beans, which will take some time to cook. Next, the Thai eggplants go in. Then add the red cotton flowers and the Turkey berries. Add all the water. Finally, add in all the vegetables. Wait for it to boil. Finish off with the coconut milk. Now, the Kaeng Khae Curry is ready.” “We kept a portion of the Kaeng Khae Curry to make another dish, which is Steamed Curry Mushroom Parcels. We can make the steamed parcels by reheating the Kaeng Khae Curry, and then add in toasted rice powder. We use banana leaves. Start off by taking some curry. Scoop it into here (the banana leaf). OK, then wrap it up. We have finished wrapping the parcels. Now we steam them. Turn on the stove and let the water boil. Then put the Curry Mushroom Parcels in the steamer. Close the steamer lid. It will take approximately 15 to 20 minutes. When the banana leaves turn yellow, it will be ready. It's done.”

The event organizer also arranged programs performed by professional artists who are waiting to treat us. Other than the stage program, there was also a table exhibition which included 40 exhibitors at the 2019 Veggie Pride Parade. About two thirds of them are grassroots organizations. It is very encouraging to find new grassroots organizations sprouting up every year. Indeed, the vegan landscape has changed so much compared to what it was a decade ago, thanks to all the heroes that we saw in the show and many others who have adopted a vegan lifestyle that benefits all.

Today on our show, the first dish will be a unique and popular Southeast Asian spicy vegetable stew in coconut milk, known as Lontong Sayur Lodeh. "Heat some oil in a pot on medium heat and fry the firm tofu until golden brown. Then fry the tempeh until golden brown. Set aside. Heat three tablespoons of oil in a pot on medium heat. Then add the sambal chili paste and stir fry for five minutes until fragrant. Add in kaffir lime leaves, long beans, half a teaspoon of salt and continue to stir fry. Then add water, carrots, yam bean, fried tofu, cabbage and bring to a boil. Then add the tempeh and add the coconut milk, sugar, salt, and mushroom seasoning to taste. Food is ready to be served." " Let’s continue to prepare our second dish – a dessert called Ondeh Ondeh. These cute little glutinous rice balls are infused with pandan leaf juice and filled with 'Gula Melaka' or palm sugar and then rolled in with some freshly grated coconut. They originated from Java and are very popular in the Malay community in Singapore. Let’s begin to make them!" " To prepare the dough, mix the mashed sweet potato and glutinous rice flour in a mixing bowl. Add water, a little at a time and knead into a soft pliable dough. Divide the dough into small dough balls. Wrap each dough with one teaspoon of palm sugar. Wrap the dough and roll it into a ball. In a pot of water, add the pandan leaves and bring it to a boil. Then add in the dough balls when the water boils. Wait and cook the dough until the balls float to the surface. Scoop them out. Remove the cooked Ondeh. Roll and coat the Ondeh Ondeh with the grated coconut. Ondeh Ondeh can be served warm or at room temperature.” “We have completed all the dishes. They look really yummy. I can’t wait to share them with my Muslim friends this evening. Hope these delightful dishes made with tender loving care can nourish their minds and spirits too. Let’s now make a raw salad. We will make them look like they’ve been sautéed. First, choose the vegetables. Many vegetables can be used. We usually use Chinese kale or Chinese cabbage. Today I have chosen spinach, and we usually use only the leaves as they are more nutritious and taste better. We like to give these vegetables a sautéed effect, but how is it possible without cooking? The trick is that we mix some salty ingredients in the leaves. Those leaves will soften gradually. Then, add oil to make them look like they’ve been sautéed.

I am going to demonstrate the making of flower jellies in goblets. Now we carve the cherry blossom at different heights. Cherry blossom is carved with a needle. We will make five thin dots from the center, pointing outward. We will make the second layer. We carve six dots outward. It would be beautiful if each layer forms a circle. Now let me show you how to make a chrysanthemum. Let’s make the green clusters of pistils and stamens first. We use chrysanthemum nozzle instead. The petals of chrysanthemum should surround the clusters of pistils and stamens, forming a circle along the edge of the clusters. Now let’s make a water lily. The first layer is green pistils, and the second layer is yellow stamens, and purple for the third layer. Now let’s make the small petals for the water lily. We use a small petal nozzle. Alongside with the outer layer, make a circle around the stamens. Big petal nozzle. Carve the big petal between two small petals. I will demonstrate how to create new combinations. Today, I have demonstrated how to make the cherry blossom jelly, chrysanthemum jelly, the creative flower jelly, and the water lily jelly. May you have a colorful vegan life filled with love and God's grace!

It’s full of vegetables, so deliciously cooked." Bibimbap is a traditional Korean dish, a rice bowl topped with various vegetables and chili paste. And nowadays, the switch to a vegan diet is very easy. There are more and more (vegan) products, in restaurants, everywhere you go. It is possible to eat vegan. The second tip I can give, is that you can look up recipes on the internet, so you can convert your family’s favorite recipes into vegan dishes.”

Chef Jessica Nguyễn, the owner of The Kind Bowl, opened the vegan café in June 2020 in Singapore to fulfill her passion for sharing quality plant-based foods with the world. Her mission is to raise awareness amongst the public of their social and environmental responsibilities to “Go Green” to reduce their carbon footprints for a sustainable world. Today, she will show us two more fascinating vegan fusion dishes. “The first recipe that I’ll be sharing is Fragrant Herbal Rice.” “First, chop all the herbs finely, and add olive oil in a mixing bowl and set it aside. Now, let’s toast the vegan fish or vegan ham until golden brown.” “You do not need to stir it; just let the vegan fish cook slowly until golden brown. Now, we mix all the ingredients together with the rice in the big bowl.” “After mixing the rice with all the ingredients, we will add the roasted pine nuts into the rice, and we just give it a mix. And that’s it.” “We will now prepare some delightful chocolate mousse. This delectable vegan dessert is an all-time favorite of people of all ages. Here’s where East meets West as we combine chocolate with coconut - a tropical fruit commonly found on Southeast Asia’s islands.” “Now, we’ll add the coconut cream into the mixing bowl, and we add the cocoa powder, sugar, syrup and mix the cream until it’s smooth. Whip it until it forms a mousse-like texture. Keep it chilled inside the fridge. Now, we crush the walnuts. Set aside the walnuts. (Next), we melt the chocolate over the boiling water. Let’s assemble the chocolate mousse cups. We’ll add a layer of crushed walnuts, and another layer will be the coconut cream and the last layer; we add the melted chocolate. And lastly, we use the rose petals as a topping. We put it in the fridge for 20 minutes for the best taste. Our delightful (vegan) chocolate mousse is now ready.”

Animal Rebellion was established in June 2019 by eighteen leading social justice groups in the UK, broadly known as the Rebellion Alliance. Both groups, Animal Rebellion and Extinction Rebellion, plead with the government to declare climate change as an emergency, to act with urgency to slash emissions to “net-zero” by 2025, and to set up a citizens’ assembly with legislative power. "Animal Rebellion’s goal is a world where all animals, all beings are free from exploitation and oppression.… We all need a stable climate to survive. And Animal agriculture is the leading cause. …So, the only way we can address the climate emergency is by first addressing the animal emergency, and the strategy that we’ll be using will be non-violent direct-action civil disobedience. When we do these actions, we really force the public to listen, and to hear this narrative that we are telling."
